Lemon, Poppyseed & Blueberry Overnight Oats

 

Serves 2

 

Ingredients

 

100g Flahavan’s Organic Jumbo Oats

150ml Flahavan’s Oat Drink (or milk of choice)

2 tablespoons of Good4U Immune Boost Milled Seed Breakfast Boost

80g plain Greek yoghurt

2 teaspoons of honey

Zest of 1 lemon

1 tablespoon of lemon juice

75g blueberries

1 tablespoon of chia seeds

2 teaspoons of poppy seeds

 

Topping

Lemon curd

Method

 

1.Combine all the ingredients in a re-sealable jar or container, mix well and refrigerate overnight.

2.In the morning, serve with a dollop of lemon curd and a sprinkling of Good4U Immune Boost Milled Seed Breakfast Boost and enjoy!

 

 

Mixed Berry Summer Smoothie Bowl

 

Serves 1

 

Ingredients

 

150g frozen mixed berries

1 sliced banana, frozen

100-120ml of Flahavan’s Oat Drink (or milk of choice)

1 teaspoon of honey (optional)

45g tablespoons of Flahavan’s Organic Porridge Oats

1 tablespoons of Good4U Vitamin Milled Seed Breakfast Boost

 

Topping

Mixed berries

Cacao nibs

 

Directions

1.Put all the ingredients into a high speed blender and whizz until smooth.

2.Add a little more milk if needed.

3.Serve immediately in a breakfast bowl and top with fresh berries, cacao nibs and more Good4U Vitamin Milled Seed Breakfast Boost

 

Dark Chocolate & Chilli Energy Balls

 

Makes 12-14

 

Ingredients

 

100g pitted dates

100g Flahavan’s Organic Porridge Oats

3 tablespoons of Good4U Protein Milled Seed Breakfast Boost

50g of 70% dark chocolate, chopped

½ level teaspoon of cayenne pepper

1-2 teaspoons of water (if needed)

 

Directions

 

1.Put all the dates into a food processor and pulse until they form paste.

2.Add the remaining ingredients and blend until the mixture starts to clump together, scraping down the sides to redistribute the mixture once or twice.

3.Add a little water if the mixture is too crumbly.

4.Divide the mixture into 12 and roll into balls (approx. 25g each)and refrigerate for one hour. Store in an airtight/sealed container for up to a week, if they last that long!

 

 

Savoury Oat Muffins

 

Makes 12

 

Ingredients

 

100g Flahavan’s Organic Porridge Oats

120g plain flour

30g/4 tablespoons of Good4U Vitamin Milled Seed Breakfast Boost

3 teaspoons of baking powder

350ml buttermilk or sour milk

1 egg

½ red pepper, diced

125g/ ½ medium courgette, coarsely grated

½ small onion, finely diced

75g feta cheese, crumbled

Salt and freshly ground pepper

 

Directions

 

1.Preheat your oven to 190c/170c fan/gas 5. Grease and flour a 12 hole muffin tin or line with paper cases.

2.Put the flour, oats, Good4U Vitamin Milled Seed Breakfast Boost and baking powder in a bowl and mix well. In a large jug whisk the egg with the buttermilk.

3.Place the grated courgette in a clean tea towel and squeeze out all the moisture.

4.Add to the jug with the red pepper, onion and feta. Season the mixture well with salt and freshly ground black pepper then add to the dry ingredients, mixing quickly until just combined.

5.Spoon into the muffin tin and bake for 20-25 minutes until golden on top and a skewer inserted in the muffin comes out clean.

6.Allow to cool in the tin for 5 minutes before transferring to a cooling rack. Serve as a snack or with soup for lunch. These make great lunchbox fillers too.
