This recipe is devised by Paul Watters – author of “Simple Tasty Healthy by PW”
Ingredients:
125g asparagus tips
200g sugarbelle tomatoes (cut in half)
4 red onions (peeled and cut into dice)
200g cooked smoked sausage (available in all good supermarkets – sliced)
400g peeled and shelled prawns
500g pappardelle pasta (available in all good supermarkets)
handful of basil (picked)
1 teaspoon of chilli flakes
Serves 4
Method
Firstly get a pot or pan of salted water to boil for the pasta.
Gather a large pan and add add a couple drizzles of olive oil to the heat.
When your water comes to the boil add pasta and allow to cook for 7 minutes stirring frequently.
Add prawns to the pan and cook for 2-3 minutes.
Add onions and asparagus and fry for a further 3 minutes stirring well and making sure the prawns are being mixed well.
Add the tomatoes and sliced cook sausage, season with salt and black pepper.
Add half a ladle of the pasta water to the pan – this will help form a sauce.
Add in the chilli flakes and mix well, then add basil.
Strain the pasta and add to the pan, mix well ensuring everything is coated and transfer to large serving bowls.
Add more black pepper if required and for a finishing touch add a little more picked basil and parmesan cheese. Enjoy!
