This recipe is devised by Paul Watters – author of “Simple Tasty Healthy by PW”
Ingredients:
2 onions (peeled and chopped)
4 carrot (peeled and chopped)
2 sticks of celrery (chopped)
200 g potatoes (peeled and chopped)
1 cup of frozen peas
2 cloves of garlic (crushed)
200g conchiglie pasta
4 pints of vegetable/stock
2 tablespoons of tomato puree
1 can of chopped tomatoes
1 handful of chopped flat leaf parsley
1 sprig of thyme (picked)
Method:
In a large pot or pan add a drizzle of olive oil. Add the vegetables and cook for a few minutes. Add the garlic and cook for a further two minutes. Next add the tomato purée, chopped tomatoes and stock. Bring to the boil and add pasta. Cook until all is soft and serve. Add chopped parsley for garnish and enjoy!
