This year, Coeliac Awareness Week takes place from May 9th – 15th. It aims to highlight the challenges of living with Coeliac Disease and offer guidance on how to manage the condition.

Coeliac disease is an autoimmune condition that can cause a person to have an adverse reaction to foods containing gluten. It affects an estimated 50,000 people in Ireland with a further 400,000 people suffering from gluten intolerance.

Whether you’re gluten intolerant or simply experimenting with a gluten-free lifestyle, Aldi has a selection of gluten-free recipes for you to try at home. From an appetising Aubergine and Coconut Peanut Curry to a delicious Beetroot Base Pizza, they are easy, tasty, and nutritious. Plus, they’re all made with vegetables and cupboard staples that can be found in your nearest Aldi.

 

Aubergine and Coconut Peanut Curry

 

Ingredients

  • 1 Aubergine
  • 1 Large Red Onion
  • 400ml Tin Ready, Set, Cook! Coconut Milk
  • 50g Snackrite Chilli Peanuts
  • 5g Red Chilli
  • 20g Fresh, Peeled Ginger
  • 1 Clove Garlic
  • 35g Cucina Tomato Purée
  • 1 Tsp Stonemill Curry Powder
  • 1 Tsp Stonemill Paprika
  • 1 Tsp Stonemill Ground Cumin
  • 5g Fresh Coriander
  • 40ml Specially Selected Rapeseed Oil
  • Sea Salt and Black Pepper
  • Basmati Rice

 

Method

  1. Peel, halve and slice the red onion. Cut the aubergine into medium size chunks.
  2. Peel and finely chop the garlic. Finely chop the chilli, seeds as well. Chop the coriander and the ginger.
  3. In a large frying pan or wok, heat the oil. Add the chopped aubergine, red onion, and garlic. Sauté, stirring as you cook, for about 8 minutes, until the aubergine chunks are slightly browned.
  4. Add the curry powder, cumin, paprika, chilli, coriander, and ginger. Cook, stirring for a further 3 minutes.
  5. Then add the coconut milk, peanuts, and the tomato purée. Season with some salt and plenty of black pepper.
  6. Stir well and cook on a low heat for 15 minutes.
  7. Serve with some basmati rice and some extra chopped coriander.

 

Beetroot Base Pizza

 

Ingredients

  • 2 Cooked Beetroot
  • 1 x 7g sachet Dried Yeast
  • 500g Gluten Free Plain Flour
  • 1 ½ tsp Salt
  • 2 tsp Honey
  • 200ml Lukewarm Water

 

Toppings

  • Mozzarella
  • Pesto
  • Chopped Cherry Vine Tomatoes
  • Salami
  • 1 Pepper
  • 1 Onion
  • Asparagus
  • Rocket

 

Method

  1. Pre-heat the oven to 200°C/400°F/Gas Mark 6.
  2. Put the water into a small bowl and sprinkle over the yeast. Wait until it starts to bubble a little and go cloudy.
  3. Roughly chop the beetroot up and put into a food processor along with the honey, salt and yeasty water, then blitz to a purée.
  4. In a large bowl, whisk the flour with a balloon whisk. Add the beetroot mixture and with your hands mix until the mixture comes together. If it’s too dry add a little more water, if too wet add a little more flour.
  5. Turn onto a floured board and knead for 5 minutes.
  6. Put the dough into a lightly greased bowl, cover with cling film and put in a warm place for about 80 mins, until it’s doubled in size.
  7. Divide the dough in half, then roll and pull the dough into 30cm circles.
  8. Lightly grease 2 baking sheets. Put the pizza bases on the sheets.
  9. Top with mozzarella, pesto, chopped tomatoes, salami, peppers, onions, asparagus, rocket or whatever topping you like.
  10. Bake in oven for 15-20 minutes, until the edges are browned.
