This recipe is devised by Paul Watters –  author of “Simple Tasty Healthy by PW”

Ingredients:

400g prawns (peeled and shelled)

2 cups of fine breadcrumbs

1 /2 teaspoon of chill powder
1 /2 teaspoon of cajun spice
1 /2 teaspoon of smoked paprika
Pinch of salt and pepper
2 cups of self raising flour
2 eggs (beaten)
2 carrots (peeled and cut into strips)
2 red onions (peeled and sliced)
1 red pepper (sliced)
1 green pepper (sliced)
2 red chilli (sliced)
1 clove of garlic (crushed)
200g of desired noodles
A drizzle of rapeseed oil
A sprinkle of red pepper powder (available in all good supermarkets)
Method:
First of all bring a medium size pot or pan with 500ml of water to the boil.
Whilst the water is coming to the boil prepare the prawns.
Add the flour, beaten egg and breadcrumbs to 3 large bowls.
Dip the prawns into the flour, the egg, then the breadcrumb mix and mix well.
Place onto a plate and allow to rest for a few minutes in the refrigerator.
The noodles will be cooked so strain and rinse under cold water until cooled down.
In a large frying pan add a drizzle of rapeseed oil, add veg and cook for a few minutes.
Add chilli and garlic mix.
Next add noodles then soy sauce and sesame oil,
Mix well and allow to rest at the side of the cooker to keep warm.
Gather another pan, add a little rapeseed oil and fry the prawns for 3 minutes each side.
To serve, place noodles and veg in the centre of a plate or large bowl and place prawns on top.
Sprinkle on the red pepper powder and picked coriander.
