This is a lovely recipe you can add walnuts IF you wish. Use 50g chopped and some whole for decoration on top.
Ingredients:
Self Raising Flour 225g
Light Muscovado Sugar 150g
Sultanas 125g
Walnuts Chopped 50g
Grated Carrot 150g
Rind of one Orange
Eggs 3
Sunflower Oil 175ml
Ground Cinnamon ½ tsp
Ground Nutmeg ¼ tsp

Cream cheese topping:
Cream Cheese 225g
Icing Sugar 375g
Vanilla 1 tsp
Method:
Preheat oven to 150°C, I used 6”
Line deep cake tin with double layer of baking parchment paper.
Put sugar, sultanas, carrots and orange rind into a bowl.
Beat eggs and oil together and stir into the carrot mixture.
Sieve flour, cinnamon, nutmeg and and add to the other ingredients.
Gently stir all ingredients well together.
Transfer to prepared tin and smooth top.
I baked mine for approx 1 hour, to test if baked press down slightly if its springs back up its baked or alternatively insert skewer if comes out clean its baked! I’d leave it in tin for 10/15mins then turn onto wire rack to cool.
Cream Cheese Topping:
Make the topping by beating all the ingredients together. Make sure cake is completely cooled before adding cream cheese topping on.
