The five-star hotel in Belfast, renowned for blending luxury with a dedication to local flavours, has appointed Ross McAlister as Executive Sous Chef. McAlister brings a wealth of experience from his previous role as Sous Chef at the Grand Central Hotel, another five-star Hastings Hotel property.

Notably, McAlister reunites with Executive Head Chef Mark Begley, marking a return to the partnership they established 14 years ago.

He joins as the Culloden clinched the Food Lovers Choice Award for Northern Ireland at the Good Food Ireland Awards, held this week at the prestigious K Club in County Kildare. The awards celebrate individuals and establishments that embody Ireland’s rich culinary heritage.

Mark Begley, Executive Head Chef at Culloden Estate & Spa, expressed pride in the team’s latest achievements. “Our culinary vision has been a priority across the Culloden Estate & Spa, and we’ve developed a dynamic team of talented chefs who are deeply committed to local provenance and seasonal menus.

“The addition of Ross will enhance our offerings further, bringing exciting new dishes, and even stronger partnerships with local suppliers.”

Begley highlighted the wide array of dining experiences that Culloden offers: “We strive to provide a unique culinary journey for our guests, from our celebrated breakfast, which showcases our local suppliers, to our immersive seven-course tasting menu, artfully curated afternoon teas, and more relaxed dining options at our estate’s Lough bar and Cultra Inn restaurant.”

Reflecting on the recent recognition, Begley added, “Winning the Food Lovers Choice Award for Northern Ireland is an incredible honour for our team. It speaks to the collective passion that drives each of us to innovate and elevate our offerings daily, pushing culinary boundaries in ways that honour both tradition and creativity.”
