– Lauren’s Patisserie opens in Sligo this Friday – a lifelong dream for local woman
A pastry chef with experience at some of the world’s most celebrated patisseries is opening her own cake and coffee takeaway store in Sligo on Valentine’s Day.
Lauren McLoughlin – a native of Drumcliffe, in Co. Sligo – will open the doors to Lauren’s Patisserie on Adelaide Street at 10am on Valentine’s Day.
The new shop will be located beside Salon 2 on Adelaide Street serving cakes using the finest ingredients as well as coffee from Bell Lane in Mullingar.
Lauren is a qualified pastry chef with more than ten years’ experience working in some of the most celebrated patisseries in the world. She honed her skills at renowned establishments including Gleneagles in Scotland, Ashford Castle in Ireland, Le Petit Caporal in France, and Peggy Porschen in London.
In 2017, while working for Gleneagles, she had the honour of representing Scotland at The Culinary Olympics held in Germany.
Lauren’s culinary career started with a trip to Gleneagles as a treat from her uncle on her 18th birthday. When visiting the pastry kitchen there, the chef told her she might get better training in the industry rather than culinary college, and she started an apprenticeship with Gleneagles during Ryder Cup Week a few months after completing her Leaving Certificate at the Ursuline College in Sligo.
Lauren was working for Peggy Porschen in London when she came home for a holiday in 2020 and couldn’t return because of the pandemic. She had always wanted to run her own business, so she began wholesaling desserts to hotels, cafés and restaurants – she now has clients nationwide.
Lauren also caters for weddings, other celebrations and corporate events, only sourcing the highest-quality ingredients, including Benbulben eggs, Irish butter and the finest Belgian chocolate and cocoa powder.
