The Firehouse Bakery chef and baker shares his recipe for golden, air-fried chicken in homemade potato and roast garlic buns, created with Bosch and NEFF appliances

Patrick Ryan, chef and baker at the Firehouse Bakery, is sharing his take on the ultimate Air-Fried Chicken Sandwich, created using Bosch and NEFF appliances. From soft potato and roast garlic buns to perfectly crisp, golden chicken, this recipe brings together bakery craft, indulgent flavours and innovative technology for an impressive homemade treat.

The secret to Patrick’s crispy chicken lies in the preparation: an overnight Sriracha brine helps keep the chicken moist and flavourful, while a double coating of seasoned flour and buttermilk creates the craggy, golden finish that makes fried chicken so irresistible. The homemade buns are just as important, with cooked potato helping to create a soft, light texture and roasted garlic adding an extra layer of flavour.

Full recipe below:

Sriracha Brine

  • 500ml water
  • 25g salt
  • 50g Sriracha
  • 6–8 skinless, boneless chicken thighs

Flour Dredge

  • 500g plain flour
  • 100g tapioca flour
  • 200g cornflour
  • 2 tbsp baking powder
  • 2 tbsp sea salt
  • 1 tbsp cracked black pepper
  • 2 tbsp smoked paprika
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 1 tsp cayenne pepper

Buttermilk Coating

  • 500ml buttermilk
  • 2 eggs
  • 1 tsp salt
  • 1 tsp pepper

Potato & Roast Garlic Buns

  • 1 bulb garlic
  • 20g olive oil
  • 160g cooked potato
  • 450g strong white flour
  • 10g fresh yeast (or 5g dried)
  • 235g water
  • 8g salt
  • 1 egg + splash of milk, for egg wash

To Serve

  • Sriracha mayo
  • Shredded lettuce
  • Butter, for toasting

Method

  • Brine: Mix the water, salt and Sriracha. Add the chicken thighs, cover and refrigerate overnight.
  • Roast Garlic: Roast the garlic in the NEFF N90 Added Steam Oven at 160°C for 25 minutes, until soft. Squeeze out the cloves and mix with the olive oil.
  • Make Buns: Add the flour, potato, roasted garlic, oil and salt to the Bosch Stand Mixer. Dissolve the yeast in the water and add. Knead for 12 minutes on low speed, followed by 3 minutes on high speed. Cover and transfer to the NEFF oven’s Dough Proving function for 90 minutes.
  • Shape & Bake: Divide the dough into 10 × 90g portions, shape into rounds and return to the NEFF oven, using the Dough Proving function at 30°C with steam for 45–60 minutes. Egg wash and bake at 220°C using Full Steam for 14 minutes. Allow to cool.
  • Coat Chicken: Mix the dredge ingredients. Remove the chicken from the brine and coat thoroughly, turning 20 times. Dip into the buttermilk coating, drain, then return to the dredge and turn another 20 times. Rest on a wire rack.
  • Air Fry: Generously spray the chicken with oil on both sides and place on the NEFF Air Fry Tray. Cook using the oven’s Air Fry function at 200°C for 10 minutes, turning after 5 minutes, until golden and crisp.
  • Assemble: Slice and butter the buns, then toast until golden. Add Sriracha mayo, shredded lettuce and the crispy chicken. Serve immediately.
