Earlier this year the team at Micil Distillery paused production of their hand-crafted spirits for the first time since 1848. The action was taken as part of an effort to free up the distillery’s supply of alcohol and begin manufacturing antibacterial hand sanitiser to assist in the fight against Covid-19. Although spirit production at Micil Distillery remains halted, stocks of the traditional poitíns and award-winning Connemara gin are still available from the distillery.

Micil Distillery Cocktails and Signature Serve Recipes

 

Micil Irish Gin 

A luxury Connemara gin with an extraordinary flavour – distilled with Connemara flowers and herbs including bog myrtle, hawberry, heather, and bogbean. Handcrafted by the Micil family at Galway’s only distillery, Micil Irish Gin has a rich, spicy, citrusy zing that contributes towards an unforgettable Gin & Tonic. Micil Irish Gin was awarded a Silver Medal in the ‘Contemporary Style Gin’ category at the World Gin Awards in London on the 15th of January, 2020.

Recommended Serve: Micil Irish Gin is best served with premium classic tonic water, generous ice and a wedge of lime.

Ingredients

  • 50ml Micil Irish Gin
  • 25ml lemon juice
  • 10ml sugar syrup
  • 2 spoons apricot jam
  • 1 egg white
  • Dash of Peach bitters
  • Ice

 

Method:

  1. Shake the ingredients without ice for around one minute so that the egg white starts to froth, then add ice and shake again. 
  2. Strain into a glass filled with ice and garnish with Peach bitters.

 

Micil Heritage Edition Poitín 

A unique Irish product that celebrates the finest poitíns of the past, when great poitín was considered a superior spirit to single malt and pot still whiskey. Distilled from peated & malted oats and barley. An exceptionally smooth spirit with warm, sweet, fruity flavours, gentle smoke, and a nutty finish.

Recommended Serve: Micil Heritage Edition Poitín is best enjoyed neat or on the rocks and goes great with food, particularly the rich, full and well-rounded flavour of Crozier Blue cheese.

Ingredients 

  • 60 ml Micil Heritage Edition Poitín
  • 10 ml Martini Rosso
  • 3 dashes of Angostura Bitters
  • Ice

 

Method

  1. Chill a martini glass. 
  2. Fill a stirring glass with ice and then add the remaining ingredients. 
  3. Using a bar spoon, stir the mixture until the liquid doubles in size. 
  4. Empty the ice from your glass and strain in your martini mixture to serve.

 

Micil Irish Poitín 

A smooth, spicy poitín made from 100% malted barley and Connemara bogbean, and the stand-alone leader in the Irish Poitín category. Produced in the Micil Distillery in Galway by a family of 6th generation Connemara poitín makers, proud of their 170 years of heritage and craft experience. A great sipping poitín with its trademark honey spice flavour and wonderfully smooth velvety texture. A ‘Micil Mule’ made with Micil Irish Poitín delivers a wonderful depth of sweetness, flavour and spiciness that no other mule can match.

Recommended Serve: Micil Irish Poitín combined with ginger beer, lime and ice makes an astonishingly refreshing ‘Micil Mule’ with a satisfying bite.

Ingredients 

  • 35ml Micil Irish Poitín
  • 15ml Premium Coffee Liqueur
  • 10ml simple sugar syrup
  • shot of premium espresso
  • Ice
  • 2 – 3 coffee beans

 

Method

 

  1. Fill a shaker with ice cubes and add the rest of your ingredients. 
  2. Shake and fine strain into a cocktail glass. Garnish with coffee beans.

About Micil Distillery

Micil Mac Chearra began distilling poitín in Connemara in 1848. Micil’s hand-crafted spirits were always made entirely from quality grain, meaning his smooth, spicy poitín was highly sought after, often featuring at parties, weddings and celebratory events in the West of Ireland. For six generations his family continued to make their high-quality spirits illegally, after laws passed in 1661 and 1779 targeting small distillers had driven poitín-making underground.

Following the re-legalisation of Poitín in 1997 Micil’s direct descendant, Pádraic Ó Griallais, opened Micil Distillery in 2016, almost 170 years after his great-great-great grandfather Micil had established the family’s first stillhouse in Connemara.
