Introducing Mark Moriarty’s ‘Flavours of Summer’ BBQ garlic flatbreads served with a fantastic selection of charcuterie and dips

M&S is delighted to share the final recipe in partnership with chef, Mark Moriarty as part of his ‘Flavours of Summer’ campaign, a collection of four fresh and flavour-packed recipes, perfect for summer.

For the latest ‘Flavours of Summer’ recipe from Former World Young Chef of the Year and Forbes 30 Under 30 lister, Mark has created a crowd-pleasing BBQ garlic flatbread with M&S’ most popular selection charcuterie and delicious dips.

This stress-free summer side is perfect for casual evenings spent in the garden under the summer sun, a real summer winner! Mark’s recipe is simple to put together yet packed full of flavour.

This tasty side is easily customisable and allows everyone to mix and match with a dip or dollop of their favourite M&S flavours. This recipe showcases the best ofM&S’ freshest produce and focuses on the clever combination of quality ingredients for a summer staple you are bound to re-visit, every time the sun shines! With 3 for €10 on deli items, there’s no reason not to stock up on a selection of tasty deli delights.

Mark will host an Instagram Live from the @marksandspencerireland account, giving followers the chance to cook along at home and re-create this summer recipe on Thursday, 12th August at 6PM.

To cook along with Mark at home, all you’ll need is:

  • 300g strong flour
  • 7g fast action dried yeast
  • 150ml warm water
  • 20g M&S extra virgin olive oil
  • 30g natural yoghurt
  • 2 cloves garlic, peeled
  • 10g salt
  • 50g M&S farmhouse butter
  • 3 garlic cloves

 

Method:

  1. To make the dough, add the flour, dried yeast and salt together in a bowl using your hand (or in a mixer if you have one).
  2. Add the olive oil, yoghurt, grated garlic cloves and warm water together and mix heavily until a wet dough is achieved. Cover with a cloth and leave in a warm place for 1 hour to double in size.
  3. Empty the dough onto a floured bench and roll flat to about 1cm thick using a rolling pin. Cut the dough into squares.
  4. Preheat your BBQ until smoking hot. Place the flatbreads on the grill or flat-top for 1 minute on both sides until charred.
  5. Move flatbreads to the top grate of the BBQ to cook for a further 2 minutes with the lid closed.
  6. Cook the butter on the heat with the crushed garlic cloves until browned. When the flat breads are cooked, brush with the garlic butter, season with salt, and serve.
