M&S is delighted to share the second of four recipes in partnership with chef, Mark Moriarty as part of his ‘Flavours of Summer’ campaign, a collection of four fresh and flavour-packed recipes, perfect for summer.

For the latest ‘Flavours of Summer’ recipe from Former World Young Chef of the Year and Forbes 30 Under 30 lister, Mark has created a delicious summer inspired spiced quinoa salad with pomegranate, yogurt, lime and mint.

This vibrant summer salad is bursting with bright colours and mouth-watering flavours, perfect for brightening up any summer barbecue, picnic or packed lunch. The showstopping recipe is quick and easy, making it perfect for whipping up in time for a gathering of friends and family this summer.

The no fuss recipe showcases the best of M&S’ freshest produce and focuses on the clever combination of simple and flavoursome ingredients for a modest yet impressive summer salad!

Each month throughout the summer, Mark will host an Instagram Live from the @marksandspencerireland account, giving followers the chance to cook along at home and re-create his summer recipes, with his quinoa salad recipe live taking place on Thursday, 17th June at 6PM.

To cook along with Mark at home, all you’ll need is:

  • 250g quinoa
  • 1 packet Cook With M&S fajita spice blend
  • 2 litres vegetable stock
  • 1 red pepper, diced
  • 1 container, prepared pomegranate seeds
  • 50g natural yoghurt
  • 50g feta cheese
  • 1 lime
  • 1 packet Cook With M&S mint
  • Handful dill
  • 50g Toasted sunflower seeds
  • Salt

Method:

  1. Preheat your oven to 200c
  2. Heat a heavy based pot and add some oil, sweat the peppers for 3 minutes until soft. Add the quinoa, season with salt and add the Cook With M&S fajita spice blend, cook for a further minute
  3. Add the stock and bring to the boil, place a lid on and cook for 20-30mins in the oven until all the liquid has evaporated and the quinoa is fluffy and cooked
  4. Spoon the quinoa out onto a large plate
  5. Dress the salad with the pomegranate seeds, lime zest and juice, drizzle with yoghurt, then sprinkle with crumbled feta, sunflower seeds, mint leaves and dill
