With the first few weeks of the New Year firmly under our belt Mash Direct have joined forces with fabulous foodie and photographer Lili Forberg to create a series of four delicious recipes to help  reboot your routine this January!
January can be a challenging time of year, and getting back into routine can be a difficult task but the award-winning vegetable accompaniments producer Mash Direct are here to help you kick start 2022 and ‘Reboot your Routine’.  From a no meat Monday delicious vegetarian lasagne for all the family to a Boxty Brunch for those lazy Sunday mornings, Mash Direct wants to lend a helping hand to anyone looking to get their health and wellbeing back on track this January without the need to peel and chop – perfect!

Boxty Brunch 

Serves 4 

 

Ingredients 

For the Boxty

200g Mash Direct Mashed Potato 

200g grated raw potato 

200g plain flour 

150ml milk

1 egg

Salt & pepper for seasoning 

Butter for frying

Topping per Boxty cake

1 Mash Direct Onion Ring 

1 egg

45g spinach chopped 

Chilli flakes and chives for seasoning 

 

Method 

  • Gently mix all the Boxty ingredients together in a mixing bowl 
  • Heat some butter in a pan on a medium heat
  • Using an ice cream scoop or large spoon, scoop the mix onto the pan and gently flatten into a pancake shape
  • Cook for approximately five minutes on each side until the Boxty is golden brown
  • Remove from the pan and keep warm under -some foil 
  • Add some more butter to the pan and sauté the spinach for 2 minutes on medium heat seasoning with salt
  • Push the spinach to the edge of the pan and add the eggs frying on medium / high heat for a few mins, then reduce heat and fry until eggs are ready to your liking.
  • Serve the spinach eggs on top of the boxty and sprinkle with chilli flakes, chives and black pepper 

 

One Pan Veggie Lasagne 

Serves 6

 

Ingredients 

400g Mash Direct Carrot & Parsnip 

120g courgette (approx half a courgette)

200g mushrooms

100g spinach 

1 pepper 

1 small onion

1 stick celery 

3 cloves of garlic 

1 tin chopped tomatoes 

8 lasagna sheets 

200g grated cheddar 

1/2 mozzarella ball

50ml cream 

Salt and pepper 

Mixed herbs 

5 Basil leaves 

 

Method 

  • Chop all the vegetables 
  • Fry the garlic and onion on a medium heat for two minutes
  • Add the chopped veg and fry for five minutes
  • Stir in the Mash Direct Carrot & Parsnip 
  • Pour in the tinned tomatoes and add a half tin of water 
  • Cook for a further 15 minutes on a medium heat
  • Season with salt, pepper and mixed herbs
  • Stir in 1/2 the cream
  • Add a layer of lasagna sheets and gently submerge into the sauce
  • Sprinkle on a layer of cheese 
  • Add another layer of lasagna sheets and the rest of the cream and submerge in sauce
  • Sprinkle the remaining cheese and crumble on the mozzarella 
  • Bake at 160° for 20 minutes or until the cheese is golden
  • Garnish with the basil leaves before serving

 

Mash Direct Roast Vegetable Salad

 

Ingredients

Salad

300g Mash Direct Roast Carrot & Parsnip Fries

100g Chickpeas

1/2 head lettuce 

100g red cabbage 

1 red pepper

1 avocado 

100g bulgur wheat 

30g feta cheese 

30g nuts and seeds 

Dressing 

3 tbsp mayo

2 tbsp lemon juice

1 tbsp water

 

Method

  • Roast the Mash Direct Carrot & Parsnip Fries with the chickpeas for 20 mins at 180°
  • Cook the bulgur as to the pack instructions 
  • Toast the nuts and seeds on a dry pan and drizzle some balsamic on top 
  • Place the lettuce into a bowl
  • Layer the other ingredients on top 
  • Drizzle the dressing over the top 

 

Cheesy Cauliflower & Broccoli Pinwheels 

 

Ingredients 

200g (half a pack) Mash Direct Broccoli with a Cheese Sauce

200g (half a pack) Mash Direct Cauliflower Cheese Gratin 

100g grated cheese 

1 sheet puff pastry 

 

Method

  • Mash the broccoli and cauliflower 
  • Spread a thin layer on top of the pastry 
  • Sprinkle the grated cheese on top
  • start at the narrow side of the pastry sheet and roll until the end of the sheet 
  • trim off the ends 
  • Cut the roll into slices around 1” wide
  • Place the slices flat onto a baking sheet ensuring you leave space for them to expand as they cook. 
  • Place into a preheated oven at 180° for 20 minutes until the pastry is golden brown
