Hen’s Teeth has opened its new Diner on Blackpitts, Dublin 8. Serving a menu concepted by Karl Whelan (executive chef & owner of Hang Dai Chinese) and Hen’s Teeth Diner manager Rich Lewis (formerly Grano, The Night Hare).
The lunch menu includes soups, salads, sandwiches and tartines (open-faced sandwiches) with a focus on delicious, fresh Irish ingredients. Signature dishes include a salad of Black Pudding, Sprout Slaw, Apple, Little Gem & Mustard; Roast Chicken, Butter Head, Cranberry Mayonnaise on Sage and Onion Brioche; Celeriac Crushed and Raw, Toasted Hazlenut, Aioli on Granary; and, Crab, Fennel Salad with Lemon Mayonnaise on Brown Soda Bread.
Speaking about opening a Diner, Greg Spring, founder of Hen’s Teeth, said: “Karl and Rich have nailed the menu – bringing to life what we do at Hen’s Teeth through food. The addition of a full kitchen, café and wine bar allows us to do so much more in the space from pop-up dinners to cookbook signings with renowned chefs from around the globe.”
Hen’s Teeth Diner is open from 8am-12pm for coffee and pastries; 12pm-4pm for lunch; and, until 10pm on Thursdays, Fridays and Saturdays for a selection of wines, wine-based cocktails and bites.
The fit out of the new Hen’s Teeth 2,600sq-ft premises was made possible through a successful Kickstarter campaign which saw 600 people contribute more than €47,000. The design and build was completed by Dublin architecture and interiors firm AB Projects.
