M&S is delighted to announce the continuation of their partnership with Former World Young Chef of the Year and Forbes 30 Under 30 lister, Mark Moriarty. Following Mark’s successful Flavours of Summer campaign and Autumn campaign in 2021, the Dublin-based chef and star of RTÉ’s Cook-In and Beyond the Menu is back with a series of mouth-watering recipes for 2022.

Mark has created a series of recipes marking key moments throughout the calendar year including Meat Free Monday’s for January, an indulgent Valentine’s Day dessert and in celebration of St. Patrick’s Day, a twist on an Irish classic with all recipes using the very best of M&S produce. Followers and customers are encouraged to re-create Mark’s easy to re-create, delish recipes and enjoy restaurant quality dishes from the comfort of your own home.

Trying out Veganuary or just looking to try more plant-based meals? Why not try the first of Mark’s new recipes, Dukkah Roasted Butternut Squash, Chickpea with Feta and Basil. This recipe is easy to create at home, packed full of flavour and is one the whole family can enjoy. Bursting with flavour, it is both satisfying and healthy without compromising on flavour.

This succulent dish see’s Mark substitute meat for vegetables. The dish oozes Middle Eastern flavours with Butternut squash roasted and coated in Dukkah spice blend from the Cook With M&S range as well as the additions of zesty limes, feta cheese and Diijon mustard. The dish is then brought together with a beautiful salad and a helping of deliciously velvety, M&S Collection hummus, leaving you craving meat-free options all week long.

This recipe showcases the best of M&S’ produce and focuses on the clever combination of simple yet flavoursome ingredients for a truly delicious dish which is easy to create at home.

To follow Mark’s delicious recipe at home, all you’ll need is:

Ingredients: Serves 2

  • 1 Butternut squash
  • 4 tbsp Cook With M&S Dukkah spice blend
  • 1 tin chickpeas
  • 50g feta cheese
  • 1 pack cook with Thai basil
  • 50ml olive oil
  • 50ml Dijon mustard
  • Juice and zest of half a lime
  • 50g pitted green olives
  • 100g M&S Collection extra smooth hummus

Method:

1.    Preheat oven to 180c.

2.    Peel butternut squash, scrape away seeds and pulp using a spoon. Quarter the squash.

3.    Heat some olive oil in a pan and colour the squash on both sides, add the Cook With M&S Dukkah blend and place in the oven for 5mins. Remove the squash and grate lime zest on top.

4.    Add the olive oil, mustard and lime juice to a bowl and mix. Add the strained chickpeas, feta and green olives and mix.

5.    To plate, spoon some of the M&S Collection hummus onto the bottom of the plate, top this with the dressed chickpea salad, followed by the roasted squash. Tear some basil leaves and drop on top.
