With roughly 20,000 oysters served each year at The Shelbourne, Dublin’s Grand Dame is getting ready to celebrate Oyster Month once again this September, as the best season for the finest bivalves officially begins.
During the month of September, No. 27 Bar & Lounge at The Shelbourne will feature a special menu with Carlingford oysters from Louth, Flaggy Shore Oysters from Clare and Kelly’s Giga Oysters from Galway Bay.
Guests can enjoy The Shelbourne Oyster, a half dozen coastal oysters served fresh from Irish waters on the half shell (€24), or opt for the vibrant, zesty Ponzu Oysters dressed with chilli and spring onion (€26). For a bolder bite, the Oysters Bloody Mary comes infused with iconic cocktail spices (€27), while those who prefer cooked oysters can indulge in the classic Oysters ‘Rockerfella’ (€28) or the indulgent Tempura Oyster Truffle (€28). Rounding out the menu is The Shelbourne Lawyer, featuring a half dozen oysters paired with Liscannor crab and finished with a rich Green Spot whiskey glaze (€34).
To elevate the experience, The Shelbourne’s sommelier has curated a series of tailored drink pairings designed to complement every flavour profile. The Shelbourne Oyster pairs effortlessly with either a glass of Laurent-Perrier Brut (€26) – a versatile Champagne with crisp acidity – or the Blanc de Blancs (€64), celebrated for its vibrant, elegant finish that compliments the oyster’s natural brininess. For the Ponzu Oyster, the sommelier recommends The Orchard No. 4 (€26), where smooth Boatyard Vodka, delicate hibiscus, and floral elderflower tonic topped with Laurent-Perrier Champagne create a bright, refreshing balance to the dish’s citrus and umami notes.
The Oyster Bloody Mary finds its match in a classic Spiced Bloody Mary (€19), a spicy version of the classic cocktail that brings a subtle kick to extend the dish’s savoury finish. For richer options, the Tempura Oyster Truffle is complemented by L’Oro Royale No. 2 (€26), a bright mix of passion fruit purée, Galliano, soda, and Laurent-Perrier Champagne that cuts through the luxurious tempura and truffle with citrusy freshness.
