This recipe is devised by Paul Watters –  author of “Simple Tasty Healthy by PW”

Ingredients:

2 cups of Rice noodles

2 garlic cloves (crushed)
1/2 handful of fresh coriander (chopped)
1/2 bunch of Thai basil
1 red chilli sliced
2 limes (squeezed and keep juice)
2 tablespoons of vegetable oil
2 Chicken breasts (finely sliced)
6 Spring onions (sliced)
100g bean sprouts
2 tablespoons of Fish Sauce
1 tablespoon of light brown sugar
2 large eggs (beaten)
2 handful of cashew nuts (crushed and ready to serve)
The Method:
 
Firstly bring the noodles to the boil.
Strain and leave aside.
Mix together the coriander, basil,  chilli and lime juice in a small bowl.
Bring a wok to a high heat.
Add the oil and gently add the chicken.
Cook for 3 -4 mins.
Add the coriander, basil and chilli mix, stir well.
Add spring onions and beansprouts and coat well.
Add fish sauce and brown sugar and allow to cook for a few minutes.
Pour in the egg mix and cook until a scrambled egg has formed.
Add in the cashew nuts.
Garnish with a few more cashew nuts, coriander, basil and beansprouts if you fancy.
Serve and enjoy!
