This recipe is devised by Paul Watters –  author of “Simple Tasty Healthy by PW”

Ingredients:

The Marinade

6 large chicken thighs
1 teaspoon of mixed all spice
1 onion (peeled cut in half)
1 teaspoon of smoked paprika
2 habanero peppers
7 garlic cloves (peeled)
250 ml of pineapple juice
50ml of White vinegar
2 tablespoons of brown sugar
Method
Blend together in a food processor until ingredients are blended together.
Place chicken thighs in a large bowl and pour over mix.
Mix well ensuring the chicken is marinated completely.
Allow to leave to marinade for two-three hour’s before cooking.
The Black rice
Black Rice is a very good addition to this dish as I feel it’s perfect in flavour and nutritional value.
1 cup of black rice
2 cups of boiling water
Salt and pepper
The tender stem broccoli
6 piece of tender stem broccoli (trimmed)
The baby onions
8 baby onions (peeled and kept whole)
Method
After the Chicken is marinated you are ready to get cooking, preheat the oven to 180 degrees  / 350 farenheit.
Bring a large frying pan to the stove on a medium to high heat, add a drizzle of oil.
Place chicken thighs skin side down and cook for five minutes on either side.
Transfer to an oven proof dish and place in the oven to cook for twenty minutes occasionally turning.
Bring a medium size pot or pan to the stove with the boiling water, this will be used for the onion and rice.
Once the water has come to the boil add the onion and boil for three to four minutes.
Remove and add to the chicken and roasting tray along with the chicken.
Add the rice and cook for fifteen minutes.
After five minutes of cooking of the rice add the broccoli to the oven and cook for approx ten mins.
The Chicken, onion and broccoli will be cooked around the same time as the rice is cooked.
You are now ready to plate. Place the rice in the middle of the plate.
Place the broccoli and onion around the plate and place the chicken on top.
Garnish with some picked coriander and sprinkle the habanero spice over the chicken and around the plate.
