This recipe is devised by Paul Watters –  author of “Simple Tasty Healthy by PW”

Ingredients:

440g five bean salad (can rinsed under cold water)

440g of smoked sausage (sliced)

4 large potatoes (peeled, rinsed and cut into chunks)

2 large sweet potato (peeled, rinsed and cut into chunks)

2 large onion (peeled and diced)

4 carrot (peeled and diced)

4 sticks of celrery (rinsed and diced)

2 cloves of garlic (crushed)

1/2 teaspoon of smoked paprika

1 teaspoon of dried thyme

1 teaspoon of cumin

1 teaspoon of dried rosemary

2 tablespoons of tomato purée

2 beef stock cubes

4 pints of water

Fresh flat leaf parsley – chopped for garnish

 

 

This is a very simple one pot wonder. It’s a good family meal or something made quickly when you get home from work and can keep in the fridge after cooking for a few days.

 

 

First of all gather a large pot and add a drizzle of olive oil.

Add the sliced sausage along with the onions, celery and carrot cook for a few minutes.

Add the garlic and spices and cook for a few minutes.

Add the potatoes and tomato purée and mix well.

Add the beef stock and water and bring to the boil, simmer until vegetables are soft (chefs tip add a little Worcestershire sauce at the last minute for a depth of flavour and colour)

Season with salt and pepper and enjoy!
