This recipe is devised by Paul Watters – author of “Simple Tasty Healthy by PW”
Ingredients:
2 sirloin steaks
4 cherry tomatoes (cut in half)
1 courgette (cut down the middle, length ways and sliced)
2 red onions (sliced)
1 red pepper (sliced)
1 green pepper (sliced)
4 handfuls of fusilli pasta
1 clove of garlic (crushed)
1 sprig of thyme (picked)
4 tablespoons of olive oil
1/2 bunch of basil (picked)
Salt and pepper
Method:
This is a very elegant dish and looks beautiful. It will definitely impress anyone at your dinner table and yet so simple to make.
Firstly gather two medium sized sauce pans and a pot for the pasta.
Bring 2 pints of water to the boil and add the pasta and cook for 12 minutes and strain.
While the pasta is cooking add two tablespoons of olive oil into each pan.
Add the steak in one and season with the salt and pepper.
In the other pan add the red onion, garlic and picked thyme and cook for a few minutes.
Add courgette and peppers and cook for a further few minutes.
Check on the steak and cook to your liking.
Meanwhile mix the pasta along with the vegetables and season with salt and pepper.
Add basil and mix well.
Remove steak from the pan, allow to rest for a few minutes.
Add slices to thickness required and add pasta and vegetables to a large bowl or plate in the centre of the dish.
Arrange the steak around and add a little drizzle of olive oil around the food if you wish.
